His kitchen team relies primarily on the seasonal bounty of local farms to prepare such delights as hamachi tartare layered harmoniously with diced cucumber, smashed avocado and pea sprouts; or a fried chicken sandwich with shredded cabbage, house-made ssam sauce and hand-cut fries.
