This ramen shop focuses on making soup using locally raised chickens. Its three signature flavours are soy sauce, dried sardines and white broth. Be sure to try the chicken ramen. To make the signature soup, dashi is drawn from chicken bones and whole chickens. A blend of several soy sauces is then used to deepen the flavour. The fragrance of the wheat is drawn out by using thin noodles. The ambience is reminiscent of the aristocratic culture of old Kyoto.
