The cuisine here, which is very focused on its tasting menu (a lunchtime menu is also available midweek), champions Japanese cuisine that is delicious and full of well-defined textures. Don’t miss the spicy scallops or any of the ceviches (Clásico, Nikkei, or Carretillero – a seafood ceviche with a yellow chilli pepper-flavoured tiger’s milk and fried calamari).
