Two brothers work in tandem like a well-oiled machine, the elder up front and the younger in the back. The menu contains just 15 items, all nigiri. To maintain complete harmony between topping and vinegared sushi rice, no snacks or ginger are offered. Most fish toppings are aged to maximize their flavour. Other toppings include rare items such as grilled shiitake mushroom and peppered Sakhalin surf clam. The brothers continually switch up the flavours in the flow of sushi.
