In fact, he is the master of working magic out of a small kitchen.Start with an heirloom tomato salad laced with olive oil, dried red chili, and paired with escabeche-style mussels. Then perfectly poached hake is served with anchovies and bitter greens for a rustic yet relishable dish. Pork Milanese plated with cucumber and shaved fennel flaunts a great deal of fun and flair.
