Nature takes centre stage at this tastefully converted 18C farmhouse, which also includes a boutique hotel. The restaurant's Nordic-inspired design and large windows that make you feel connected to the outdoors reflect the house's commitment to sustainability. The menu is centred on ingredients from the Wadden Sea and Texel, which they have either grown themselves or sourced from trusted local purveyors. Chef Joram structures his menu around the elements of earth, air, fire and water. For example, cured hamachi from Zeeland, brushed with a fruity glaze and served with pickled vegetables and a cucumber jus. Fermentation and other artisanal methods lend the dishes extra character. This exploration of Texel's ecosystems is truly captivating.
