On the edge of the Mississippi Gulf Coast in downtown Ocean Springs, Vestige stands firm as one of the most ambitious restaurants in the region. Open since 2013, husband-and-wife team Alex Perry and Kumi Omori pivoted after COVID to a contemporary tasting menu influenced heavily by Japanese ingredients and flavors. Glimmering plates feature the likes of bafun uni, matsutake mushrooms, and koji presented with great care. Guinea hen grilled yakitori style and paired with black truffles and charred eggplant puree was one past highlight. Modern art hangs on the walls, tables are generously spaced, and however complex the cooking may be, the friendly staff and quaint dining room put everyone at ease without a hair of pretension.
