Edward’s varied, well-balanced tasting menu reflects his life experiences, blending Asian and European techniques and flavours in refined, interesting dishes such as Norwegian shrimp with green asparagus or turbot, 10-year-old Shaoxing and aged tangerine from Xinhui.
