Walk through the lobby of the posh Chileno Bay Resort, down a small hill and along a dramatic walkway with swings and lounge furniture to arrive at this open-air restaurant with beautiful views of the water. The contemporary Mexican menu is inventive with a clear personality that spans the country's distinct regions while also pulling in influences from South America. Octopus kastakan is a ceviche-style dish made with thin coins of octopus tossed with crispy cubes of pork belly and crispy pork skin. Served with warm plantain tortillas with slightly sweet notes, it's a brightly flavored dish. Their variation on a Pavlova with strawberry-basil sorbet employs a variety of pastry techniques and is noteworthy.
