Rustic and warm, as the chef himself describes it, his cuisine is rooted in the local terroir. Complete with authentic jus and attractive plating, his dishes are testament to a deft touch – creamy courgette soup with Espelette chilli oil, or veal fillet served with seasonal vegetables. The lovely selection of local wines is mostly organic.
