Imagine a romantic dinner on a lush green terrace with a stream and a waterfall softly burbling in the background! The dining room, refurbished in a trendy vein, and the chef’s table of this former 17C mill, also embody this idyllic portrait. Everything revolves around the diner in this establishment which is the epitome of friendly. The talent of Pierre Résimont shines through in a lineup of familiar flavours to which he adds an inventive spin characterised by delicate, generous craftsmanship. Examples include slices of lightly barbecued red tuna, served with a savoury shellfish seasoning and a medley of artichoke recipes (as a barigoule, crisps and cream) for a sensual finishing note. Alternatively, you may prefer breast of pigeon, cooked medium rare with a gutsy gravy and enhanced by subtle hints of hay and coriander for a final flourish. Rather than showy gimmicks, this veteran chef, who bends over backwards to pamper his guests, prefers to quietly regale diners with food that throbs with flavour. We recommend extending your stay in one of the guestrooms located in the couple’s nearby guesthouse, depicted by crisp modern lines.
