PURS NEW NORDIC JAPANESE CUISINE

Il parere della Guida Michelin
Peter Fridén, of YOSO fame, has brought his "New Nordic Japanese Cuisine" to the 17C Alte Kanzlei, the interior of which has been tastefully designed by Axel Vervoordt. In a small side street adjacent to the boutique hotel PURS, this beautiful building houses a chic restaurant decorated in muted tones. Inside, the eye is drawn to the artwork on the walls and the open kitchen, visible through a glass sliding door, where Fridén brings together three different cuisines. Born in South Korea, he grew up in Sweden, and is schooled in the French culinary arts. His six-course tasting menu (vegetarian version also available) reflects his personality with an intriguing fusion of Asian-Japanese, Scandinavian and French elements. An appealing case in point is his combination of dashi chawanmushi, delicately smoked Oscietra caviar, Mangalitza bacon broth with a subtle smoky flavour and a hint of lemon salt. Accompanied by a carefully curated selection of wines by the glass (over 1 000 labels). The sake and kombucha selections are also impressive. Great: the sweet ending in the form of a delicious cinnamon roll to go with the coffee.
