In the Confluence neighbourhood, in his new restaurant, the name of which refers to prairies or meadows, Gaëtan Gentil pays tribute to every dimension of this landscape: fruit, herbs and vegetables, of course, but also cattle, and fish from the region's lakes and rivers. One such dish would be the kohlrabi confit with lemon balm butter and fish roe, or the Arctic char accompanied by squash with tansy. This boldly creative cuisine is in touch with the zeitgeist, and delicate and gutsy at the same time.
