Likoké is the most international of the restaurants in Ardèche! The Belgian Cyriel Huysentruyt, in charge of the restaurant floor and the wines, works side by side with Colombian chef Guido Niño Torres, who adheres to the establishment's globetrotting ethos: over the course of a single set menu, he presents playful and colourful dishes like so many invitations to head off on a journey, sometimes inspired by a memory, an encounter, a past event… He cooks up some real showstoppers – "cevi chicha" is a fabulous and aromatic ceviche of matured trout and corn liquor. Everything is based on local produce: cheese and vegetables from local producers, Mezenc beef etc. Confident cooking that never ceases to surprise.
