A gift from Napoleon III to his wife Eugénie in 1854, the Hôtel du Palais, the emblematic palace of the city of Biarritz, has just reopened after being beautifully refurbished. The restaurant is on a par with this splendid setting, thanks to chef Aurélien Largeau (who has worked for Christophe Hay), who rises to the challenge admirably. Eel from the South-West, John Dory from our shores, Baserri guinea fowl from the Basque country: local produce is elevated by his meticulous approach. Pastry chef, Aleksandre Oliver (previously of Gordon Ramsay's restaurant in Bordeaux), meanwhile, successfully combines seaweed and rhubarb!
